Green Salsa Roast Beef (serves 8)
Ingredients:
- 2 lbs. beef roast
- 16oz. green salsa of choice
- 2 TB Homemade ranch dressing mix
Directions:
- Place roast in crock pot
- Cover with ranch seasoning mix
- Pour salsa over the ranch
- Cook on low for 6 hours with lid on.
- When done, remove fat and shred with 2 forks.
- let sit in sauce a few minutes before eating
Lean Spanish Taco Meat
Feeds 8 people
Ingredients:
- 2 lbs. organic, grass-fed beef
- 1/2 cup onion chopped
- 2 15 oz. cans organic diced tomatoes
- 4 cups grated or thinly sliced cabbage
- 1 bunch cilantro, chopped
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 1 tsp. garlic powder
- 1 tsp. garlic powder
- 1 tsp. black pepper
Instructions:
- Brown beef and drain thoroughly
- Dice onion and chop 1 large bunch of cilantro
- Dice 4 cups worth of cabbage in a food processor or with knife
- Pour 2 cans of diced tomatoes in blender.
- Add diced onion, chopped cilantro, & spices & blend coarsely
- Add diced cabbage to beef and pour mixture over beef & cabbage.
- Cook on med/high until bubbly
- Turn down heat and put lid on and let simmer for 10 minutes.
