Green Salsa Roast Beef (serves 8)

Ingredients:

  • 2 lbs. beef roast
  • 16oz. green salsa of choice
  • 2 TB Homemade ranch dressing mix

Directions:

  • Place roast in crock pot
  • Cover with ranch seasoning mix
  • Pour salsa over the ranch
  • Cook on low for 6 hours with lid on.
  • When done, remove fat and shred with 2 forks.
  • let sit in sauce a few minutes before eating

Lean Spanish Taco Meat

Feeds 8 people

Ingredients:

  • 2 lbs. organic, grass-fed beef
  • 1/2 cup onion chopped
  • 2 15 oz. cans organic diced tomatoes
  • 4 cups grated or thinly sliced cabbage
  • 1 bunch cilantro, chopped
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1 tsp. garlic powder
  • 1 tsp. garlic powder
  • 1 tsp. black pepper

Instructions:

  • Brown beef and drain thoroughly
  • Dice onion and chop 1 large bunch of cilantro
  • Dice 4 cups worth of cabbage in a food processor or with knife
  • Pour 2 cans of diced tomatoes in blender.
  • Add diced onion, chopped cilantro, & spices & blend coarsely
  • Add diced cabbage to beef and pour mixture over beef & cabbage.
  • Cook on med/high until bubbly
  • Turn down heat and put lid on and let simmer for 10 minutes.
